Fennel and Orange Salad :
Phyto Alchemy’s take on a classic Silician ‘Fennel and Orange’ salad.
A beautiful Spring addition to the table, perfectly paired with bbq’d meat, fish and these Sausage Rolls. This is one of the quickest and freshest tasting salads. High in antioxidants, calcium and vitamin C, fennel may assist with immune, skin and bone health.
Preparation time: 15mins ( extra 30mins to chill - optional)
Serves: 6
1 large Fennel bulb (thinly sliced)
2 sml Navel Oranges (peeled, cut in half and sliced )
1 1/2 cups of Fresh Rocket (washed and dried)
1/4 cup of Roasted Pepitas
Salt and Pepper (to taste)
2 tbsp Extra Virgin Olive oil
Fennel leaves to garnish (optional)
Ingredients:
Place rocket in base of large serving bowl
layer orange slices over fennel.
Chill in fridge for up to 30mins (optional)
Drizzle with olive oil and season with salt and pepper.
Scatter pepitas and garnish with fennel leaves.
Serve and enjoy, this delicious spring salad.
